Cooking With Vanilla

I've always loved the flavor of vanilla. It's my preferred ice cream flavor and I think it smells heavenly too. Besides that though, I really didn't know a whole lot about it, much less that you can use it to enhance your cooking and to create exquisite, tantalizing recipes.

A Century of Flavor from Nielson-Massey Vanillas has opened my eyes to the wonderful world of vanilla. This gorgeous, harcover cookbook contains fifty delicious looking recipes all using the flavor of vanilla as well as many Nielsen-Massey pure flavor extracts such as lemon, chocolate and orange. There are so many dishes that I never thought to use vanilla in such as salmon (which I make all the time), pasta with lobster and honey citrus pork roast. Who knew that vanilla was so versatile? A Century of Flavor also utilizes incredible photos of the food. When I cook, I like to know what I'm getting in the end. If these photos are any indication of what dishes I'll be getting, I'm going to try and make them all!

I have to admit that I've been using that fake imitation vanilla stuff to make my cookies, but after reading this cookbook I'm not going to do that anymore. I've now learned the value of vanilla. I thought my cookies were pretty good before, but the real thing truly makes a difference!

  1. You got me at the chocolate part. I love the REAL vanilla too. It does make such a big different. I get mine at Costco. Hey, I love cook books too. Always on the look out for a good one with pictures in it. I have to see what it is I'm making and how it's suppose to turn out.

  9. I'm with you: vanilla is one of my favorite flavors. But to date, I've only used it in desserts. Hard sauce (confectioner's sugar, butter, & vanilla)... vanilla fudge... vanilla ice cream. I'd love to learn how to use it in other recipes.
