Three Things That Make Me Think of Easter


Happy Easter! Today I was pondering the holiday and how it seems to be surrounded by bunnies, fluffy chickens and eggs. While those are great things, I began thinking of things that remind me of Easter that are not so obvious. Here is what I came up with:

1. The first thing I thought of was my son. His due date was Easter, so when I look at him that's what I think of.

2. Last night I listened to the beautiful Cantata No. 140 by J.S. Bach. It sounded so peaceful and serene, yet had so much power that it made me remember the importance of the holiday.

3. Finally, my recipe for "Chicken Puffies" makes me think of Easter. I think it's because it is one of the few things I can make without consulting a recipe book and they are always a big hit with everyone. In other words, they bring joy, satisfaction and comfort. Here is the recipe for all of you to enjoy:

Ingredients:

2-3 chicken breasts
3/4 of an 8 ounce package of cream cheese
2 cans of Pillsbury crescent rolls
1-2 tablespoons melted butter
Small bowl of bread crumbs
Parsley

Place block of cream cheese in mixing bowl to soften. Boil the chicken until it is no longer pink. Drain and run under cold water to cool it off. Shred the chicken with your fingers into the mixing bowl, on top of the cream cheese. Mix it all together and stir in some parsley. Unroll the crescent rolls and spoon about a tablespoon of mixture on the fat end. Roll up, dip it in the butter and then dip it in the bread crumbs. Place on cookie sheet. Repeat until they have all been rolled. Bake in the oven at 375 degress for 11 to 13 minutes, or until golden brown. Allow to cool and enjoy! Serves 16

  1. Happy Springtime Easter! What a darling cherub of a child you have! Looking at his basket in the picture, I started feeling bad b/c most of the candy I bought to fill the eggs for Alli was bought b/c I like it and I knew she would not be able to handle eating it so I wanted to be happy with the purchase.

  2. I love those!I had them for the first time at a Young Womens Party a couple of years ago. I make them all the time! Since i'm lazy though, I use canned chicken.
