Basic fact: I love to eat. I cook so that I can eat...and I'm no great cook by any means, but I'm trying to get better. Sometimes, I'll get carried away and try an intricate recipe only to be disappointed because I couldn't execute it properly. Other times, I'll go really easy but the meal is lacking some serious flavor. What I want is something easy to make, and is also a pleasure to eat.MyBlogSpark clued me into these great Romano's Macaroni Grill Restaurant Favorites dinner kits. Now, I'm not usually a fan of these boxed kits, but I'm willing to give anything a try especially if it's easy. Turns out, they're actually pretty tasty. We tried the Creamy Basil Parmesan Chicken and Pasta flavor. It came with everything I needed to make the meal, except for the chicken. What I loved about it was that while the meal is good on its own, it's simple to "tweak" it a bit and make it to your personal liking. I added fresh tomatoes and cheese to my dish. I also found the sauce to be a little salty, so I just added some extra water. I prepared two boxes, because it looked like it might not be enough, but there was no need. We ended up with lots of leftovers which I thought tasted even better the next day. There are four flavors for you to try:
Garlic & Herb Chicken Penne
Creamy Basil Parmesan Chicken & Pasta
Chicken Alfredo with Linguine
Chicken Marsala with Linguine

We have 6 people in our family (hubby and I, plus our 4 kids) and I love that I can get two full meals out of a giant pan of lasagna in our hungry household! When I have the time, I make a mean Chicken Mock Pie, it's basically cubed chicken breasts, potatoes, carrots & peas with two cans of chicken-mushroom soup and water. After boiling it all until cooked, I put it in a 9x13 pan and top it with cut buttermilk biscuits and bake until they're cooked.

ReplyDeleteInside Out Burgers - I found a recipe for it a few years ago and it's been requested over and over again. You make two thin patties and fill them with a mixture of cheese and whatever other goodies you may want. Then you press them together to make a big patty and grill! YUM!

Ny favorite family meal is spaghetti, because everyone in my family has a job and we work together. I boil the noodles, hubby seasons the sauce, daughter grates the cheese, middle son rips lettuce for the salad, and the littlest guy butters the garlic bread (with a plastic knife). It's great fun, and the kids want to eat spaghetti every night!
